Vacuum fried cantaloupe chip principle:

The pre-treated cantaloupe pieces are placed in the basket of vacuum fryer and go on vacuum low temperature frying. The vacuum storage tank preheats the oil temperature to 80℃, the vacuum degree is -0.095 MPa. The oil pump is let the oil into the vacuum fryer, and the vacuum degree can reach -0.085MPa when the frying is started. And the oil temperature is gradually increased. When the temperature rises to 98-100℃ and the vacuum degree is -0.098 MPa, the moisture in the melon pieces is basically evaporated. The frying process can be completed in about 15 minutes.

The oil content is one of the important indicators for judging the quality of the chips. When fried in the vacuum condition, the pressure difference will cause the oil suction in the melon, which greatly increases the oil content of the product. By controlling the degree of vacuum, the intermediate valve is opened to allow the oil to flow from the fryer to the storage tank. By rotating and de-oiling, the oil in the melon pieces is taken out to achieve the purpose of vacuum de-oiling.
